Applesauce Bread

Applesauce Bread Recipe courtesy Paula Deen

1/2 cup (1 stick) unsalted butter, softened
1/4 cup dark brown sugar
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon allspice
1 teaspoon vanilla
1 cup applesauce
2 large eggs
1 cup raisins
1/2 cup chopped walnuts
Preheat the oven to 350 degrees F. Grease and flour an 8 by 4 by 3-inch loaf pan.

Cream the butter and brown sugar. Add the remaining ingredients except the raisins and nuts. Mix well until blended. Stir in the raisins and nuts. Pour into the loaf pan. Bake for 60 to 65 minutes.

Movie Night Pizza

Movie Night Pizza Recipe ~ a Chrissy Original

Preheat Oven to 425′

1 pizza dough, store bought or from your favorite pizza shop
A palm full all-purpose flour or cornmeal
Extra-virgin olive oil, for drizzling, plus 2 tablespoons
2 tablespoons finely chopped rosemary leaves, a couple of sprigs
2 tablespoons finely chopped fresh basil (you can substitute dry herbs if you don’t have fresh… I love the Italian Blends!)
Coarse salt

Crust:
Preheat oven to 425 degrees F.
If pizza dough is frozen, thaw for 5 hours, punch down and roll out and let rise once approx 1 hour.

On a round pizza stone or pan or on a rectangular baking sheet, using flour or cornmeal to dust the dough, spread out the dough to form your crust. If you are using a baking sheet, drizzle pan with extra-virgin olive oil then set crust in place. Poke the pizza dough in several areas with the tines of a fork. Drizzle the dough with extra-virgin olive oil then season it with finely chopped rosemary & basil and a little salt. Place in oven 10 minutes.

Take Crust out and add your favorite pizza toppings or try one of my varieties and of course the cheese working all the way to the edges.

Variations

Sausage & Fresh Tomato
Spicy Italian sausage sliced
1-2 tablespoons fresh basil
Thinly sliced fresh roma tomatoes
Cover pizza
1-2 teaspoons red pepper flakes (if you like spicy!)

Not Boring Veggie
Brown in EVOO..
1-2 chopped red peppers,
1 lb fresh mushrooms,
1 onions,
3 cloves garlic,
1 small can chopped jalapeno’s or green chili’s
1-2 tsp red pepper flakes
Sauce
I use Prego jazzed up with some fresh onions & garlic browned in EVOO
1/2 cup grated Three Cheese Blend 
1 teaspoon dried Italian Spices
1 package shredded mozzarella

Return the pizza to the oven and bake until cheese is golden, another 10 to 12 minutes.

Sort-A Soba Noodle Bowl RACHAEL RAY SHOW

Ingredients

  • 1 pound whole wheat spaghetti or soba noodles
  • Salt and freshly ground black pepper
  • 2 tablespoons canola oil, divided
  • Cooked Chicken
  • 1 bunch of scallions, cut into 3 inch pieces
  • 2 handfuls (about 1/2 pound) of string beans, about 1/2 pound, cut lengthwise into strips
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 3 cloves garlic, chopped
  • 1/2 jar (about 1/3 to 1/2 cup) orange marmalade, about 6-8 ounces
  • 1/4 cup tamari
  • 1 tablespoon chili oil
  • 1/4 cup chicken stock (if needed)
  • 1 palmful sesame seeds and/or slivered almonds

Preparation

  1. Place a large pot of salted water over high heat and bring to a boil. Once boiling, add the noodles and cook according to the package directions to al dente.
  2. Toast sesame seeds and/or almonds in a skillet over medium-high heat. You can tell they’re done when you can smell them!
  3. While the noodles are cooking, heat the marmalade, tamari, chili oil and a pinch of freshly ground black pepper in a small saucepot over low heat. Stir to combine.
  4. Place a large skillet over medium-high to high heat and add 1 tablespoon canola oil, about once around the pan. Once the oil starts to ripple, add the chicken to the pan and cook, about 1-2 minute on each side. When the chicken turns white add the veggies to the pain and cook until the chicken is cooked through and the veggies are tender, about 3-4 minutes.
  5. Drain the noodles and add them to the skillet with the veggies. Pour the tamari/marmalade mixture into the skillet and give it a good toss to make sure everything’s nice and coated with the sauce. If you need more moisture to coat the noodles, add a little chicken stock. Plate the noodles onto dishes and garnish with toasted sesame seeds and/or almonds.
